A Taste of Summer

With summer coming to an end, I thought I'd share this recipe for a cake that is a summer-time favorite for us.  It has every flavor that reminds me of summer.  Tropical flavors that is and you just can't help but think of summer when you think of the Tropics.
Hawaiian Cake
1 pkg yellow cake mix
1 pkg cream cheese
1 1/4 cup milk
1/4 cup sugar
1/2 tsp vanilla
1 pkg vanilla instant pudding
1/2 cup flaked coconut
1- 20 oz can crushed pineapple (drained)
8 oz whipped topping
 
Prepare and bake cake according to pkg directions, using a greased 9x13 pan.  Cool.
In a bowl, whisk together milk and pudding mix.  Let stand to thicken.  Stir in well drained pineapple.  Spread over cake.
Beat cream cheese, sugar adn vanilla until smooth.  Mix in 1 cup of whipped topping.  Gently fold in remaining whipped topping.  Spread over pudding.  Sprinkle with coconut.
Cover and refrigerate for 3 hours or overnight.
