Peach Cobbler


This peach cobbler is one of my husband's all time favorites! He is always asking me to make it....so I thought I would share it.  Its fairly quick to mix up and makes your house smell sooooo good!

Peach Cobbler
1/2 cup soft butter
1 cup white sugar
4 tsp baking powder
2 cups flour
1 cup of milk
Cream together butter and sugar until light and fluffy.  Sift in dry ingredients alternately with milk.  Beat until smooth and then spread in a greased 9x13 pan.

Drain 1 quart of sliced peaches (saving the syrup).  Spoon peaches over batter and sprinkle with 1/2 - 1 cup sugar and 1 tsp cinnamon.  Pour 2 cups of fruit juice over peaches.  Bake for 45-50 minutes at 350 degrees.  Top will spring back when lightly touched and crust will be golden brown.

During baking, the fruit and juice go to the bottom and a cake-like layer forms on top.  Serve warm or cold with fresh whipped cream or ice cream.
You can also try this with apples for a yummy apple cobbler.
