This is a recipe my family loves! It's really not difficult. If you can make a basic white sauce, you can handle this! It's very yummy and there are not much leftovers afterwards. Please keep in mind that ingredients can easliy be substitued for a more healthy option. This is just how we usually make it.
Chicken Alfredo
1 quart half and half
1/2 cup flour
1 cube butter
1/2 tsp paprika
1 tsp nutmeg
1 tsp parsley flakes
1 tsp basil
1 1/2 cup parmesan cheese
3 chicken breast halves (cooked and cubed)
salt and pepper to taste
Warm about 1 1/2cup of the half and half in a pan on the stove top. Melt in butter. Whisk in flour and warm until sauce begins to thicken. Add remaining milk and warm. Stir constantly to prevent scorcing or lumping. Mix in spices and stir in cheese until it is melted in well. Add cubed chicken and stir until desired thickness is reached. Serve over fettucine noodles.
I do realize that I do not have fettucini in my picture. I only had spaghetti, but it still tasted great! You can alwayas go the healthier route and use milk instead of the half and half or some sort of oil instead of the butter. We just preffer the taste and flavor that these ingredients give.
