This recipe has got to be one the easiest "from scratch" muffins I have ever made. I don't use my hand mixer very often, it's usually my trust Kitchen Aid that does the work, but for this, I used the hand mixer and these babies were cooking in the oven within minutes and made my house smell sooooo good! Give them a try and you will never make the boxed stuff again.
Blueberry Crumb Muffins
1 1/2 cups flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
2/3 cup milk
1 cup fresh blueberries
Mix dry ingredients together. Add wet ingredients and mix until all is incorporated well. Gently fold in the blueberries. Fill muffin tins 3/4 full and set aside.
Crumb Topping:
1/4 cup sugar
1/4 cup brown sugar
1/4 cup flour
1/4 cup cold butter
1 1/2 tsp ground cinnamon
Mix together cinnamon, sugars, and flour. Cut in butter with a fork or pastry cutter until small crumbs form. Sprinkle over muffins.
Bake in a 400 degree oven for 15-20 minutes or until done.
