Pumpkin Pancakes with Apple Cider Syrup

Today's Make this Monday post is for a yummy breakfast I made the other day for my kiddos.  Pumpkin is one of our favorite flavors and we use fall as a great excuse to make any and everything pumpkin that we can!  Try this one out for a lazy weekend breakfast or even a "breakfast for dinner" kind of night.  You'll be hooked, I promise!

Pumpkin Pancakes with Apple Cider Syrup
 
For the pancakes mix together the following:
2 1/3 cups of your favorite pancake mix
2 1/2 tbsp. white sugar
1/3 tsp cinnamon
1/3 tsp nutmeg
1/4 tsp ginger
2 eggs
1 1/4 cups milk
1/3 cup canned pumpkin
1/4 cup vegetable oil
 
Mix all ingredients together and fry on a griddle in 5 inch round pancakes.
 
 
For the syrup whisk together:
1  cup white sugar
1 tbsp. cornstarch
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
2 tbsp. lemon juice
2 cups apple cider
 
Combine all ingredients and place in a saucepan over medium-high heat.  Bring mixture to a boil and cook until mixture becomes clear and thick like a syrup.
(Makes 2 cups.  Can be doubles to make a quart.  Store leftover syrup in refrigerator.  Reheat to serve.)
