Chicken Salad Croissant Sandwiches

This recipe has been in our family for as long as I can remember.  It's a go-to for our family get togethers and oh so easy to whip up.  My hubby had never had it before we got married and he always asks me to make it.  Trust me, you try it once, you'll be hooked!

 
Chicken Salad Croissant Sandwiches
5 c. cooked chicken, diced 
2 c. diced celery 
2 tsp. minced onion
2 c. seedless grapes
1 c. whipping cream
2 c. broken nuts 
1 oz pkg cream cheese
1 c. mayo or miracle whip
1 tbsp. lemon juice
2 tsp. salt
1 tsp. black pepper
1-2 tbsp. garlic powder
Cook the chicken and diced it. Cut up all other ingredients. 
Reserve the nuts to add in later. 
Make the dressing of cream cheese, whipping cream and mayo, salt, pepper, garlic powder and lemon juice. Mix well until smooth. Add the dressing to all the other ingredients. Chill for at least 2 hours before serving on a crescent roll.


You can add nuts if you'd like.  We like cashews the best, but don't add them in until right before serving.  If you think you will have left-overs, serve the nuts on the side and have your guests sprinkle them on their own sandwiches.  The nuts will go soggy the next day.
You can also serve this salad in cream puffs, just chop all the ingredients fairly fine.

These sandwiches are great for a large family luncheon or just to make for a light lunch for your own little family.  You'd just need to adjust your recipe portions accordingly.
