This recipe is one I got from my adorable S-I-L. It's fairly quick and if you like Caesar Salad, you can't pass up trying this one!
Chicken Caesar Pizza
10 1/2 cups flour
1 tbsp. salt
3 tbsp instant yeast
1/2 cup sugar
3 squirts of soy lecithin
4 cups hot water
Mix all the ingredients together until it forms a dough and knead for 5 min.
Separate into about 3-4 sections (depending on how big your pizza pan is), and press out onto a greased pizza pan; making a slight lip around the edge for a little crust.
Bake at 400 degrees until golden brown. My oven cooks it in about 10-15 min, but depending on your oven and elevation, this could vary.
Cool crust for about 10 min and brush with about 1/4 cup of Caesar salad dressing.
Tear 1 head of romaine lettuce into bite sized pieces and place into a large bowl.
Mix lettuce with 1/2 cup Parmesan cheese and 1/2 cup Romano cheese.
Add about 2 cups cubed and cooked chicken breasts.
Mix in 1 cup Caesar dressing until mixture is coated well. This measurement can also vary depending on how much lettuce you used. Just add the dressing until everything is coated to your liking. Spread the lettuce and chicken mixture over cooked and cooled pizza crust and sprinkle with bacon bits.
The dough for the pizza crust can also be used to make some very good breadsticks. Press into a greased cookie sheet, top with melted butter, garlic powder, and parsley. Use a pizza cutter to score the dough into desired pieces. Bake at 350 degrees for 12-15 min.
