Lemony-Chicken and Rice Soup

I really like to cook.  I just hate to come up with deciding what to cook!
Tonight was no exception.  I got home from work after a very looonnggg day and luckily had some cooked chicken breasts in my fridge.  I just could not decide what to do with them!  We have had ridiculously cold days around here and since my hubby works outside I wanted to make something to warm us all up.  Soup!  But what kind??  I love chicken noodle soup, but I didn't want to take the time to boil the veggies and yadda-yadda.  
I found a recipe in a Taste of Home book and kind of went from there, altering it a little to fit what I had and thought my family would like.  This is the recipe I came up with.

Lemony-Chicken and Rice Soup
1- 26oz can of condensed Chicken and Rice soup (undiluted)
2- 10.5 oz cans of cream of chicken (undiluted)
2 cups water
2 1/2 cups milk
4-5 tbsp lemon juice
3 cups diced chicken
3 cups minute rice - or more (uncooked)
1 cup frozen peas
salt and pepper to taste

Mix together cans of soup, milk and water and lemon juice.  You can add more water and less milk if you'd like it  less creamy.  Add chicken and rice.  Bring to a boil and cook until rice is done and plumped up.  You can also add more rice if it looks like you'd like more.  Just keep in mind it plumps while cooking.  Add frozen peas and heat until they are warmed.  Before serving add salt and pepper to taste.  

I don't add hardly any salt simply because the condensed soups have plenty of sodium as it is, but if you don't mind the sodium and want the extra taste, go right ahead!
