Red Chili

This recipe comes courtesy of my Mother-in-law.  She is a wonderful cook!!!  It's a fairly quick and easy recipe to throw together and once you get it all mixed up, it's just a matter of letting it cook.....low and slow!
It's definitely one of my go-to recipes for chili!
Red Chili
2 lbs. hamburger
2 med. Onions
2 green peppers
cooked and fat drained off.
Add:
2 tea. Salt
½ tea. Pepper
1- 16oz can whole tomatoes (mash)
2- 8oz cans tomato sauce
2 cups tomato juice (I use 1 lg can)
1 cup salsa
2 TLB. Sugar
1 cup ketchup
1 TLB. Chili powder
5 cups cooked pinto beans or (6- 15oz cans pinto beans)


Mix all ingredients and simmer for a couple of hours. The longer it simmers the better the flavors come together. Serve with sour cream and corn chips or corn bread.

It does make a very large batch but can be frozen very easily to be reheated on those busy nights, or you could easily cut the recipe in half!

Try it with my recipe for "From Scratch" Cornbread and you have a delicious meal!!!  MMMM!
