This recipe is just a fun little twist on the regular jam and muffins breakfast ritual. I grew up eating these for breakfast and now have my kids loving them as well. The fun thing about the recipe is that there is such a variety of ways to make it with the different types of jam that it really doesnt get "old". Try it out and let me know what you think....
Jammy Muffins

& 2/3 c. flour
½ c. sugar
2
tsp baking powder
½ tsp. salt
1/8
tsp cinnamon
1/3 c. shortening
¾
c. milk
1 egg
2
c. any flavor jam
nuts (if desired)
Mix
first 8 ingredients together to make muffin batter (I use a bit more milk than what's called for). Spoon into
greased muffin tins. Add 1 tsp jam on top of each muffin, pressing
into the batter slightly. Sprinkle with chopped nuts if desired.
Bake
at 400 degrees for 20-25 minutes.
It's a pretty quick and simple recipe and like I said, my kiddos LOVE them!!
