Yummy Apple Crisp

This is a recipe I found over at FoodNetwork.com  .  Well, the original recipe had Irish Whiskey, and we don't particularly use alcohol in recipes or as a beverage, so I made some alterations and this is what I came up with.  We really enjoy it so, I hope you do as well.


Yummy Apple Crisp
1 stick of cold butter
2 lbs apples; peeled, cored and chopped
(I use 2 quart jars of our home-canned apples and just drain off the juice)
2 tbsp lemon juice
1 cup brown sugar
1 cup flour
2 tbsp vanilla
1 tsp cinnamon
1 tsp cardamom
pinch of salt
1/4 c. quick oats
whipped cream or vanilla ice cream

Preheat oven to 375 degrees and lightly grease a 3 quart baking dish.
Melt 3 tbsp of butter in skillet.  Add apples, lemon juice, 1/2 cup of brown sugar and 1 tbsp flour.  Stir well and cook for a few minutes.  Add cinnamon, cardamom, and salt.  Cook for 1 minute more.  Remove from heat and add vanilla.  Pour this mixture into baking dish.
Combine the remaining flour, oats and sugar.  Add remaining butter.  With a pastry blender or fork, mix well until coarse crumbs form.  Sprinkle over apple mixture.
Bake until golden brown and bubbly; 35-40 minutes.
Serve with whipped cream or ice cream.
